Today’s harvest from the front gate cactus at the little desert casita. Possibly Opuntia engelmannii.
These fruits are not nearly as sweet and flavorful as the yellow green prickly pears I remember from the Eastern Cape of the Old Country, but dazzle with a brilliant magenta interior.
I shall make jewel coloured cactus juice from this haul and dream in Technicolor
