Kitchen alchemy 2: fiery fermentation


Nimbu ka achar (Indian lime pickle)in the making.  

When it has matured, this lacto-fermented pickle makes  any meal come alive with heat from homegrown little Thai (Hawaiian) peppers, citrus tang from limes, earthy resonance of turmeric, toasted cumin, mustard and fenugreek all smoothed together by olive oil.
